Halloween Bake Cupcakes

What you’ll need:


150g  Butter (unsalted)

150g  Unrefined light muscovado sugar

3  eggs (free range) beaten

150g Self-raising flour

½tsp Baking powder

1tsp   Vanilla extract

100g Toffee/ fudge pieces

3 Tbsp Caramel/ Toffee Sauce


60g Unsalted butter

150g Icing Sugar

3 squares Dark Chocolate


Halloween Bake

Pre-heat the oven to 180 (fan assisted) ~ Blend the eggs and sugar together until soft and fluffy ~ Add the eggs and mix until blended ~ Fold in the flour (a little at a time), baking powder and vanilla extract ~ Add the toffee sauce and fudge pieces and mix the batter well. Divide the mixture into 12 cupcakes cases/ 24 fairy cake cases and place in the oven for 15-20 minutes.  Whilst the cupcakes are baking mix the icing sugar and butter together for the frosting (you can add vanilla extract if you wish). Once the cakes are baked and have been left to cool for 20 minutes, ice using a piping bag. I like to use the rose method for piping, starting in the centre of the cupcake and swirl in a circular motion until the cake is covered. Grate over the dark chocolate and decorate as required.

I got these decorations from my ‘Cake Decorating’ subscription but you can get any Halloween appropriate cases and accessories from ebay and your local supermarket ~ The ASDA and Tesco range are perfect!
